Some potatoes and onion thrown in the chopper gadget, an egg, and Italian breadcrumbs... Fry 'em up in some Extra Virgin Olive Oil... and sprinkle with Parmesan.... YUM!!!!

my mother used to fry them in chicken fat. actually, she fried everything in chicken fat.

I don't know if it's an ethnic thing, but those Latkes look AMAZING to me! I didn't get any this year yet.
